HERBS IN OUR GARDEN
The cultivation of herbs is one of the most pleasurable and rewarding types of gardening. In addition to enhancing your home and garden with their beauty and fragrance, fresh herbs have many practical uses.
GROWING NATURES LITTLE MIRACLES
Fertilize is very important, especially if you intent to use your herbs on a regular basis. During the growing season fertilize at least once a month with organic fertilizer. During the winter months one or two doses will be sufficient. Use only natural insecticides on herbs used for food flavouring. Pruning is essential to encourage healthy bushy growth. Should you frequently use your herbs, pruning may not be necessary as you would be pruning automatic.

The following is a list of herbs we grow in and around our organic veggie garden. This is off course not a full list of herbs you can grow. We grow herbs mainly for culinary use.

OUR CULINARY HERBS


BASIL
Tender annual   size: 30-60cm
Uses:  Basil tastes particularly good with tomatoes and makes tomato stew a real treat.
BAY LEAVES
Perennial ever green tree    size: up to 7m
Uses:  The leaf is used to flavour dishes such as casseroles, soups, marinades, curries, for a subtle flavour.
CELERY
Biannual plant    size: 20-50cm well known popular herb.
Uses:  Excellent addition to soups, stews and sauces. Seeds may be used to flavour savoury dishes and salad dressings.
CHIVES
Perennial    size: 15-30cm
Onion and garlic chives are extremely useful in the kitchen.
Uses: Flavours almost any savoury dish. Chopped fresh chives are delicious with egg and cheese dishes such as stews and soups, use the flowers in salads.

CORIANDER
Hardy annual    size: up to 60cm
Also known as chinese parsley or dhania.
Uses: Coriander leaf can be used in salads, sauces and hot meat dishes or used as a garnish like parsley. The seed is used in many dishes like curries, chutney, cakes, soups etc.
GARLIC
Annual plant     size: 30cm
An undemanding plant to grow and only takes up a little space.
Uses: Accepted as a universal flavouring. It goes with all meat dishes, chinese cooking, salads, bread, sauces and garlic butter etc.
LAVENDER
Perennial    size: 30-130cm
Encourage butterflies to your garden.
Uses: Excellent addition to marinades for game, stews and braised meat dishes.

MARJORAM
Semi hardy perennial    size: 30-60cm
Uses: Marjoram can be used in meat, fish and chicken dishes. Delicious addition to scramble eggs, salads and butter sauces.
OREGANUM
Creeping perennial    size: up to 30cm
Uses: Essential ingredients to pizzas and other Italian dishes and goes well with tomatoes, lamb, pork, egg and cheese dishes. Add to gravies, sauces and stir fries.

PARSLEY
Hardy perennial   size: 15-25cm
Known as the  KING  OF  HERBS.
Uses: Besides having a delightful taste parsley is extremely nutritious. Well known as a garnish and used in soups, stews and cooked veggies. Adds a special touch to almost any dish.
ROSEMARY
Hardy perennial    size: 60-180cm
Fragrant aroma and flowers.
Uses: Delicious flavouring for lamb, as well as bean and tomato dishes. Flowers can be used in salads.
THYME
Perennial     size: 10-30cm
One of the most aromatic of all herbs.
Uses: Use in many meat, cheese, egg and fish dishes. Tasty garnish for roasts and game. Ideal border plant for your veggie garden.
WINTER  SAVOURY
Hardy perennial    size: 15-20cm
An ideal path ending in your garden
Uses: Delicious addition to bean dishes.
Use instead of pepper whenever a pepper flavour is needed.

Aloe Vera
Perennial      size: up  to 2m
Uses: The sap makes a excellent moisturising cream. The juice can be applied to burns and rashes.
COMFREY
Perennial    size: 40-60cm
Uses: Makes an excellent fertilizer for all plants. Add to compost pile.
SOUTHERNWOOD
Perennial    size: 60-1.2m
A very decorative plant.
Uses: Very effective insect repellent eg. aphids and other small pests. Push down ant holes.
WORMWOOD
Greyish shrub    size: 1-2m
An asset to any garden.
Uses: Excellent insect repellent. Sprinkle around ant nests and fruit trees to avoid ants and fruit flies.
